What Did I Eat 5/11-5/17?

Disclaimer: I am not a health expert. I am a wife, mother and music teacher who loves to find healthy recipes and share them. I am only sharing what has worked for me, I am in no way advising others on how they should eat.

I drink only water and a cup of coffee or two a day with Trim Healthy Mama approved creamer. With warm weather I will start drinking unsweetened tea and I have discovered True Lemon. Kind of like Crystal Light but uses stevia…very good, my kids like this. They sell it at my local Meijer.

I follow the  Trim Healthy Mama plan, but I am at goal weight so I do a lot of Crossover meals, at least I am trying to do more Crossovers. This plan works so well I have dropped more weight because I haven’t done enough Crossover meals.

I exercise four times a week for twenty minutes.

We rarely go out eat, I cook A LOT!! But I enjoy it.

5.11 Breakfast: Oatmeal on the Go Cups (E)

Lunch: Leftover Cashew Chicken over rice from THM Cookbook. (Crossover)

Snack: Mozzarella with salami

Dinner: Spaghetti over spaghetti squash and salad.

Snack: Cinnamon muffin from THM Cookbook

5.12 Breakfast: Mufflet from THM Cookbook. 

Lunch: Turkey, bacon, swiss and mayo on a grilled St. Joseph Pita (so good) and Greekie Swirl from THM Cookbook

Snack: Wasa Crackers with Laughing Cow Cheese and red pepper

Dinner: A brat and salad

Snack: My mother-in-law surprised us with strawberry shortcake (not on plan but it’s okay).

5.13 Breakfast: Oatmeal on the Go Cup

Lunch: Same as yesterday

Snack: Mozzarella and salami

Dinner: Reuben in a Bowl from THM Cookbook. If I made this again I would not add the sauerkraut and I would probably have some rye bread for the rest of the family.

Snack: Trimtastic Brownie

5.14 Breakfast: Trim Healthy Pancakes (E) topped with 0% yogurt, blueberries and THM Syrup.

Lunch: Leftover Poppyseed Chicken and grapes

Snack: Peanut Chocolate Whip (not sure if that is the name) from THM Cookbook. I didn’t care for this.

Dinner: BLT Frittata from THM Cookbook and salad

Snack: Chocolate Chip Cookies from THM Cookbook

5.15 Breakfast: My Fave Overnight Oats This was not good at all.

Lunch: Leftover Frittata

Snack: Greek Swirl with berries and granola

Dinner: Leftover Wicked Chicken Chili from THM Cookbook\

Snack: Bust-a-Myth Banana cake from THM Cookbook

5.16 Breakfast: Bring on da buttah pancakes and sausage

Lunch: Leftover Reuben in a bowl

Snack: Shake gone nuts from THM Cookbook..yum

Dinner: Quinoa gone Cajun from THM Cookbook. I put this on a bed of lettuce with some feta (my daugther’s idea) so good.

Snack:  Lemon Strawberry Muffins.

5.17 Breakfast: Two eggs, hashbrowns, veggies and cheese

Lunch: Leftover quinoa

Snack: Mozzarella and salami

Dinner: Cauliflower Chowder. If you love potato soup (I do) but are trying to a THM this is a WONDERFUL substitute. I really like this soup and satisfies that potato soup craving. My daughter loves it too and my husband said is wasn’t bad…that’s good for him.
